Here are some references I have found in The Enchanted Christmas. More will be added soon. 
Disney Fairytales: When Belle is making a gift for Beast with Chip and singing "Stories", there are pictures in the book she is making that reference fairytales such as Jack and the Beanstalk (which is actually one of the books that she read in the first movie). There are two fairytale pictures in her book in particular that reference Disney fairytale movies: a mermaid and Belle and Beast on a flying carpet, references to The Little Mermaid and Aladdin
